Making almond cake
Culinary TV shows and Internet sites offer many delicious dishes with elegant names. But sometimes I don’t want to cook anything complicated, it’s better to dwell on something simple and tasty, as in childhood. Get acquainted with the classic recipe for almond cake (with photo), which has a long familiar taste.
Selection and preparation of ingredients
Sweet almond varieties are suitable for making dessert, not fried, but raw. Almond petals should not be taken. When buying nuts you need to carefully inspect. The kernels should be of the same oblong shape and uniform brown color, peel and smell good. They should not have signs of damage by insects and fungi, as well as an unpleasant odor.
Important! It is best to buy inshell or packaged almonds (if peeled)but not by weight. The shell, like the packaging, protects the kernels from damage and external influences.
It is not necessary to fry and peel the almonds from the peel; it is used raw for baking. Inshell nuts should be doused with boiling water and left for half an hour, and peeled nuts should be washed with warm water and dried.

Nutritional value per 100 g:
- Prepare a steam bath: take a saucepan and a bowl that is suitable in size so that it completely covers the pan, like a lid. Pour so much water into the pan so that its level is about 1 cm below the bottom of the bowl. Heat the water to a boil.
- Grind the almonds to small grains using a coffee grinder. You can do this in a meat grinder: add sugar, 2 protein to the nut grits, mix and grind 2-3 times.
- Mix ground almonds with proteins and granulated sugar, grind well until smooth.
- Put a bowl of sweet contents in a water bath. Warm up to a temperature of 45 ° С, i.e. until the mass becomes warm and sugar crystals melt.
- Remove the bowl from the water bath and allow the dough to cool.
- Pour the sifted flour and stir. The dough should turn out pretty liquid.
- Cover the baking sheet with baking paper or just grease with oil and sprinkle with flour.
- Put the dough with a spoon or using a pastry bag. Future cakes should be round.
- Bake cookies for 20–25 minutes in the oven, heated to 150–160 ° С (not higher than 170 ° С). Cool the finished baking, after which it can be eaten.

Properly prepared macaroons are shiny, with cracks and crunchy. If you add less eggs and more flour to the dough, it will become steep and elastic. Then inside you can put the filling, for example, pieces of chocolate or fruit. It’s also very tasty.
